Chinese Fried Rice
Ingredients
- 3 eggs, beaten
- 8 oz smoked sausage, cubed
- 1/4 tsp salt
- 1 Tbs olive oil
- 4 green onions, finely chopped
- 1 carrot, finely chopped
- 1/2 cup frozen peas
- 2 Tbs olive oil
- 4 cups cold cooked rice
- 1 tsp chicken bouillon powder
- 2 Tbs water
- 1/4 tsp garlic powder
- 3 Tbs light soy sauce
- 2 tsp sesame oil
Instructions
- On low heat place 1 tablespoon of olive oil in large saucepan or wok. Cook beaten egg briefly, breaking into pieces. Remove and set aside.
- Add 2 tablespoons olive to saucepan or wok. Add sausage, onions, carrots and peas. Stir-fry for 2 minutes.
- Add cold rice, chicken bouillon powder, garlic powder, soy sauce and sesame oil to pan. Toss lightly to mix well and heat for 3 minutes. Add in egg pieces and mix.
- Additional soy sauce may be added to taste.
- Serve and enjoy!
