Cake Mix Chocolate Chip Cookies

A very cakey cookie made from a yellow cake mix

Yield: 6 dozen cookies

Ingredients

• 1 box (18.5 oz) yellow cake mix
• 1/3 cup + 2 Tbs brewed coffee ( aka 7 Tbs & 1 tsp)
• 1/2 stick of butter, melted
• 1 egg
• 6 oz semi-sweet chocolate chips

Instructions

1. Preheat oven to 350F
2. Combine cake mix and coffee in large mixing bowl and stir
3. Add melted butter and egg; beat with a hand mixer
4. Stir in chips until mixed well, the dough will be stiff
5. Spray baking sheets with non-stick cooking spray
6. Drop the dough by tablespoons onto baking sheets
7. Bake for 12-14 mins @ 350F
8. Let cool 2 mins, then transfer to cooling rack
